I tried this dish in Constantinople (Istanbul). I remember that I persisted in asking our tour guide to get the recipe. The result was for the chef to come out of his kitchen and share the recipe with the whole of our group. We were a large group and had reserved the whole restaurant for our meal, so when he was done serving and after my persistent nagging, he came out shyly and shared

the recipe with us. He said that he would keep some secret tips for his grandchildren but I don't think that he kept anything back. Before he gave it to us he made us promise that we won't open a restaurant next to his, serving this particular dish. The recipe called for lamb ground meat but I asked him if it's all right to use beef instead of lamb and he said "here you tried it with lamb, when you get home will you have a problem with lamb?" Everyone laughed but he said that I can use beef ground meat as long as it has enough liquids because beef ground meat has less fat than lamb.
