No-knead rustic loaf

This is the familiar "eftazimo" (seven-times-kneaded) - a popular folk etymology of the word "aftozimo", meaning self-kneaded. However, this loaf here has no seven-times-something or chickpeas! It has plenty of water and legions of yeast. Those do all the hard work: kneading. You just sit back and enjoy a gourmet bread the next day, that is self-kneaded, a bread that even a 4-year-old child can make (with a bit of help at baking).
